4 pounds of beef short ribs
2 tablespoons of vegetable oil
1 onion, diced
2 carrots, chopped
4 cloves of garlic, minced
2 cups of red wine
2 cups of beef broth
2 sprigs of fresh rosemary

Preparation Instructions:
Prepare the Braised Short Ribs:
Season the short ribs generously with salt and pepper.
In a large, ovenproof Dutch oven, heat the vegetable oil over medium-high heat. Add the short ribs and sear them on all sides until they develop a rich, brown crust. Remove the ribs and set them aside.
Sauté the Aromatics:
In the same Dutch oven, add diced onions, chopped carrots, and minced garlic. Sauté until they become tender and fragrant, about 5 minutes.
Deglaze and Braise:
Pour in the red wine and beef broth, scraping up any browned bits from the bottom of the pot. Return the seared short ribs to the pot.
